Curry Maple Glaze

Ingredients

  • 1 tbsp curry powder (mild)
  • 1/3 cup organic maple syrup
  • 2 lemons, squeezed
  • 1/4 cup olive oil
  • 2 garlic cloves, minced
  • 1 tsp sea salt

Instructions

Using a fork,  mix all ingredients together into a bowl.  Cover your fish, meat or vegetables with the sauce into a bowl and place in the  refrigerator covered for approx 30 minutes. Cook as desired – best in the oven.

Mexican Mole Sauce

This delicious sauce can be ready in 20 minutes,  adding that Mexican flavor to any dish.  Serve with chicken, rice and/or topping it over your tacos, burritos or tortillas.

Ingredients

  • 1 tbsp olive oil
  • 1 small onion, finely chopped
  • 2 tbsp unsweetened cocoa
  • 1 tsp cumin
  • 1 tsp sea salt
  • 2 garlic cloves, minced
  • handful fresh cilantro, chopped
  • 1/2 tsp cayenne pepper
  • 1 can tomato paste
  • 1 cup water

Instructions

Heat oil in a medium saucepan over medium heat, and cook the onion and garlic until tender. Mix in cocoa powder, sea salt and cumin. Stir in the tomato paste with water and add cayenne pepper. Bring to a boil, reduce heat to low, cover, and simmer 10 minutes. Add in fresh cilantro. Pour directly over food  and serve.

Cilantro-Parsley Pesto

 

Ingredients

  • 1 handful parsley, chopped
  • 3 small garlic cloves, minced
  • 1/2 small jalapeno, seeded & finely chopped (optional)
  • 1/4 cup walnuts, chopped
  • 1 tbsp nutritional yeast
  • 1/2 cup olive oil
  • 1 tsp sea salt

Instructions

Combine all ingredients into a food processor. Blend until all smooth

Salsa

Ingredients

  • 2 large tomatoes, chopped
  • 3 spring onions, chopped
  • handful cilantro, chopped
  • 1 lime, juiced
  • pinch sea salt

Instructions

Mix all ingredients together.

Basil Pesto Sauce

Ingredients

■1 cup fresh basil, washed and dried
■¼ cup olive oil
■2 garlic cloves
■2 tbsp Romano parmesan cheese
■¼ cup pine nuts or walnuts

Instructions

Add all ingredients into a food processor. Process until the sauce becomes smooth and the pine nuts are combined well. You may add more olive oil need be, to make the sauce smoother. Add to your pasta, veggies or fish.
