Maple Nutmeg Sweet Potatoes


  • 2 large sweet potatoes, peeled & cut into cubes
  • 2 tbsp pure maple syrup (organic)
  • 1 tbsp nutmeg
  • 1 tbsp coconut oil
  • Pinch sea salt


  1. Scrub the sweet potatoes with a clean produce brush and rinse with cool water. Use a vegetable peeler  to peel sweet potatoes. Using a knife, cut off any woody portions and cut into bite size cubes
  2. Fill a medium sauce pan about half full (you will need just enough water to cover the sweet potatoes) and add a dash of salt. Bring to boiling. Add sweet potatoes. Cover the pan and cook sweet potatoes for 10 to 12 minutes or until just tender on the outside but resistant in the centre when pierced with a knife. For soft, tender sweet potatoes, cook for 25 to 30 minutes
  3. Drain the potatoes. Add syrup, coconut oil, nutmeg and salt. Using a potato masher or electric mixer mix until all ingredients are blended well
  4. Serve while hot.

Yield: 4-6
