Mixed Greens with Sunflower & Pumpkin Seeds with a Creamy Balsamic Vinaigrette Dressing

This is my favourite salad to eat any time of the day. If you’re looking to impress some guests or just looking for a healthy alternative in the middle of the week, this is the salad you’ll want to try. With the combination of the sunflower and pumpkin seeds, adding a mild nutty taste with the subtile sweetness of the balsamic vingear…Yum! This taste so good, my mouth is watering just as I write about this.


Medium Size salad bowl portion of Mixed Greens

  • 1/4 cup sunflower seeds
  • 1/4 cup pumpkin seeds
  • 1/3 cup carrot, grated
  • 2 tbsp red onion, grated
  • 2 tbsp crumbled feta / goat cheese (optional)

Balsamic Vinaigrette Dressing

  • 2 tbsp organic vegenaise
  • 2 tbsp olive oil
  • 1/4 cup balsamic vinegar
  • 1 garlic clove, minced


  1. Mix all liquids together with garlic using a fork or small wire whisk until smooth
  2. Put all fresh ingredients into large bowl. Toss with Balsamic Dressing and serve right away

Yield: 4
