Chocolate Chip Nut Banana Bread

Who doesn’t like the smell of a fresh-baked banana bread? I remember growing up as a kid, my mother used to bake banana bread first thing in the morning. Sometimes, I felt she always baked it in the morning to get me out of bed. Well, if she did, it worked!

That’s what is so great about banana bread, you can eat it anytime of the day. Providing you have the most nutritious ingredients. I often switch up the ingredients. If your going to serve it as a dessert after dinner, you may want to keep the chocolate chips. Or if you’re serving it for breakfast you might want to include blueberries

  • 1 cup rice flour
  • 1 cup flax-seed meal
  • 1 tbsp ground chia (salba)
  • 1 tsp baking soda
  • 1 tsp baking powder
  • 1/3 tsp cinnamon
  • 1/2 tsp sea salt
  • 3 bananas, mashed
  • 1/2 cup almond milk
  • 1/4 cup coconut oil
  • 1/4 cup raw agave
  • 1/2 cup chopped walnuts
  • 1 cup chocolate chips

  1. Pre heat oven to 350 degrees F. Mix wet and dry ingredients in two separate large bowls
  2. Mix the wet and dry ingredients together and fold slowly with a wooden spoon, until everything is mixed together, removing all clumps and any dry traces of the flour. Stir in the chocolate chips
  3. Pour batter into a non stick loaf pan. Bake for 40 minutes.  At the 4o minute mark , you can also insert a knife in the center of the loaf, and if you don’t see any traces of the uncooked batter, it’s ready!

Yield:  Approx 10 slices
