Quinoa Stuffed Peppers


  • 1 cup red quinoa
  • 2 cups of crushed tomatoes
  • 2 large green peppers
  • 2 shallots, chopped
  • 2 carrots, shredded
  • 2 cups mushrooms, chopped
  • 1 tbsp dried thyme
  • 1 tsp garlic powder
  • 2 bay leafs
  • Pinch cayenne pepper


  1. Preheat oven 350 degrees F. Soak quinoa for 20 minutes, then rinse. Add rinsed quinoa to 1 1/4 cup of boiled water, cook until fluffy and water is absorbed
  2. While quinoa is cooking, satay on medium heat shallots, carrots and mushrooms until tender. Add thyme, bay leafs, garlic powder, sea salt and cayenne pepper
  3. Once quinoa is cooked, add to onion mixture and stir in 1 cup of crushed tomatoes. Cook for 2 minutes.  Spoon mixture into one pepper at a time. Poor excess crushed tomatoes around the peppers in the baking pan and on top of peppers
  4. Finish with sea salt before putting in the oven
  5. Bake for 30-35 minutes or until the peppers slightly brown

Yield: 2-4
